About The Chef


RATED # 1 in the nation for “Culinary Schools” in the early 1980’s, I attended Joliet Junior College. They purchased a hotel in an economically deprived area of downtown Joliet, IL. Located within 40 miles of Chicago, students flocked to the area.

When the struggling hotel, with banquet facilities, a pastry kitchen, bar, and restaurant opened its doors to the culinary students of Joliet Junior College, the Hotel/School was on the map again.

 

Chef/Instructors from all over the world came for this ground-breaking experience. The first class had six students, of which I was so blessed to be one.

 

Today it’s a waiting list.

 

Graduating with an Associate’s degree in Culinary Arts, my education included the  success of a Banquet Facility, Tableside dining service, Master Chef training in pastries, and an elegant Sunday Brunch with chef carved meats and omelette stations. We butchered all meats on the premises as well.
